
Mix In a Small Bowl:
- 1 clove garlic, finely chopped
- 2 t raspberry vinegar
- 2 T extra virgin olive oil
Set aside.
Mix in a Large Bowl:
- 1/2 pound baby spinach
- 1 cup strawberries, thinly sliced
- 1/3 cup sliced almonds, toasted
- 2 oz feta cheese, crumbled
Refrigerate.
When you are ready to eat, gently toss the raspberry vinaigrette with the salad and serve.
